RAVA IDLY

Rava Idly - One of the popular breakfast items in namma Bengaluru. It is made of rava/sooji(semolina) and hence very nutritious and healthy! Thanks to my mum for teaching me this yummy stuff!

INGREDIENTS:
Rava - Uppit Rava or Coarse Rava(semolina) - 250gmsCurds / Yogurt - 200mlGreen Chillies - 2 or 3Coriander leaves - Handful finely choppedCurry leaves - 1 SprigGinger - 1" inch gratedSoda - 1tspCoconut - scrapped - one handfulMustard, channadal and urad dal for seasoningSalt to tasteCarrot - Shredded, tomato - sliced, coconutHOW TO MAKE: Take 1tbsp oil in a kadai and fry rava till the colour changes to light red and starts giving nice smell.Keep it aside in a plate.In the same kadai, take another tbsp of oil and heat it. Once hot, add the seasoning items i.e., Mustard, channadal, urad dal, curry leaves, coriander, ginger and finally cashewnuts.In a big mixing bowl, mix the fried rava and the seasoning. SHAVIGE UPPITTU(VERMICELLI UPMA)

A quick and yummy dish for breakfast or snack! "Shavige " a kannada word means " vermicelli/Sevai"


INGREDIENTS:
 4 cups vermicelli(I use Dragon shavige/concorde shavige as there is no necessity to fry before using shavige.If using MTR,you need to fry and then immerse the shavige in water.)3 tsp Refined Oil1 tsp Mustard seedsa pinch of asafoetida1 tsp Urad Dal1 tsp Chana Dal½ tsp Turmeric Powder6-7 Green chilliesFew curry leavesOnion - 2 finely chopped1 Green Bell pepper, thinly sliced1 carrot nicely cut1 tsp Lemon juiceChopped coriander leavesSalt to tasteHOW TO MAKE: Boil water in a vessel and add the vermicelli in boiling water and let it stay for five to seven minutes.Drain the excess water and keep it ready.(Do not let it soak for a long time as the vermicelli will become soggy)Heat oil in a saucepan. Add the mustard seeds, urad dal,chana dals,a pinch of asafoetida. PUDINA PALAK JUICE

This one's my Mom's recipe:-)Pudina Palak juice is my all time favourite drink. It is a very tasty juice made using  mint and spinach leaves and other spices readily available at home. This is a highly nutritious drink which also aids in good digestion.




INGREDIENTS:
Palak leaves - 3 bunches(Take only the leaves)Pudina Leaves - 1 bunch(Take only the leaves )Pani Puri masala/Jaljeera powder - 2 -3 TspSalt to tasteGinger - a small pieceLime juice - 2 -3 tspCold water - 1 litreSugar - 1 tspHOW TO MAKE: Take a grinder and add all the ingredients above and grind them well.Take a strainer and strain the residue and store only the juice.Add more water/salt if needed.Serve Chilled and enjoy!(Note: Makes about 4 glasses of juice) Preparation time: 15-20 minutes .

PALAK PANEER(SPINACH COTTAGE CHEESE CURRY)

Palak Paneer is a yummy North Indian dish prepared with spinach and Paneer(Indian cottage cheese). This  is a rich, smooth, creamy curry where paneer cubes are cooked in a onion-tomato-spinach based gravy which is moderately spiced with Indian spices.


INGREDIENTS:
3- 4 big bunches of spinach (discard the coarse stems) -pressure cook 5 minutes and make a paste and keep it ready250 gms paneer (cubed and lightly fried till brown in a tsp of ghee)2 tbsp ghee (clarified butter)1 tsp cumin seeds3 onions finely chopped4 green chillies slit length wise1 tsp ginger garlic paste1 tsp red chilli Powder1 tsp coriander Powder2 big juicy tomatoes (blanched in hot water, peeled and pureed)1 cup water (use the water in which spinach was cooked)salt to taste1 tsp garam masala powder1/2 tsp kasuri methi 1 tsp malaiHOW TO MAKE: Add ghee in a Kadai/saucepan  and add cumin seeds and let them splutter. Add the onions and green chillies and sauté them till light brown. PHULKAS/ROTIS

Phulkas or Rotis [Indian Bread] Phulkas or Rotis are the healthier options for wheat based staple like chapathis or Parathas. They are light and easily digestible and easy to make! It sure needs some practice before we start getting perfect phulkas..so keep trying and am sure you’ll get the hang of it soon! Ingredients: ·Wheat flour – 200gms ·A glass of lukewarm water ·Salt to taste ·Oil [Optional: to mix with the dough – 1tsp] How to make: ·Sift the wheat flour for anything other than wheat flour!! Add a pinch of salt and incorporate well in to the flour using your hands. ·Take a flat but a deep plate or vessel in which we can freely move our hands while making the dough. In a circular motion add water little by little and bring the dough to a ball like shape. Make sure the dough is not very hard or very soggy. ·To make soft rotis, we must kneed the dough well. DUM ALOO

A tangy tomato based gravy to tingle your taste buds! Baby potatoes when crisped and added makes it a yummy combination!


Ingredients:
Baby potatoes-15-20Big ripe tomato-1Onion-1Green chillies-4Ginger Garlic paste – 2 Tsp2-3 strands of coriander leavesKitchen King Masala / Garam Masala – 1 TspTurmeric – ½ tspRed Chilli powder – 1 tspCashew nut paste [8- 10 in no. and undiluted milk of ½ cup]Salt to taste How to make: ·Boil the baby potatoes with skin on and with some salt; Peel off the skin after its boiled pierce holes with the help of a fork and shallow fry till golden brown. Take it out on a paper towel n drain the excess oil off. Keep it aside. ·Grind tomato, onion, chillies to a fine paste. ·Take a sauce pan and add 2 teaspoon oil. Sauté some cumin seeds and onion tomato chilli ginger garlic paste till it is done and doesn’t give raw smell. BREAD BONDA

Here is how to convert those boring breads to "Boombastic" Bonda:-)


INGREDIENTS:

Bread Slices -5Shredded Carrot -1Onions-1Shredded Raw Potato -1Garam Masala -1/2 tspChilly powder-1/4 tspSalt to tasteCoriander Powder-1/2 tspCumin Powder-1/2 tspMaida flour or chiroti Rava - 3-4 tsp for bindinglime juice - 1 tspRefined oil for frying
HOW TO MAKE:

Take a bowl  and mix shredded carrots, potatoes with garam masala,chilly powder,coriander powder,cumin powder and salt to taste.Add maida flour or chiroti rava and lime juice to the above mixture.Fry finely cut onions and add them to the above mixture.Mix well to get an even binding.Take a saucepan.Heat oil and keep it ready.Cut the bread edges and dip the bread in water from one side and immediately squeeze it to remove excess water.Add the masala prepared above  into the wet bread piece and fold the bread so that the masala is bound inside the bread.Deep fry the bread bonda until the bread turns golden brown.Remove excess oil using tissu…

RAVA ROTTI-ZERO OIL!

Rava Rotti is a family favorite of ours as its very healthy with absolutely no oil and at the same time the chewy texture is a sure hit with the kids !
Ingredients:



Chiroti Rava [Fine Semolina]- 250gms Cucumber  2 big or 4-5 zucchiniFinely copped onion- 2 bigMethi leaves finely chopped- 1 big bunch Curry leaves-2-3 strandsGreen chillies-5-6  [according to taste]Salt to tasteHow to make:

Use a hand blender or a mixer to finely chop cucumber/zucchini, onions, methi leaves, curry leaves, chillies. It should be a coarse mixture and not a fine paste.To the above mixture add Semolina & salt and mix well. (NOTE:pls do not add extra water to this dough!)Set aside in a container and rest it for 45mins. You will notice the dough will be stringy and elastic.




Take a non-stick pan and spread the dough evenly.Cover it with the lid and let the rotti cook in sim-med flame. Note this roti should not become crisp unlike other rotis. Softer the rotti, tastier it turns out to be.

VEGETABLE MAKHANWALA

Tried this recipe and it came out very tasty.Do try and lemme know!Got this recipe from my cousin Priya.It is a sure hit with Phulkas/Chapatis/Rotis!

INGREDIENTS:

Mixed vegetables (french beans, raw banana, cauliflower, peas)- 2 cupsTomatoes-3Peppercorns -3-4Cloves(lavang)-3-425 mm. (1") cinnamon (dalchini)Cardamoms(elaichi)-2 -3whole dry red chillies, broken into pieces - 3-4Tomato sauce -2tbspCornflour- 2tspcoconut milk -1/2 cupCashewnut powder-2 TbspButter -3 TbspSalt to tasteHOW TO MAKE:
Boil a vessel full of water and immerse the tomatoes in it for one minute.Remove, de-skin and de-seed tomatoes and chop finely. Keep aside.Heat the butter in a pan, add peppercorns, cloves, cinnamon, cardamoms and red chillies.Add the chopped tomatoes and cook till mashed.Add the tomato sauce and boiled vegetables and mix well.Dissolve the cornflour in the coconut milk and add to the gravy.Add the ½ cup water and bring tc a boil.Add the salt and cashewnut powder. ALOO MUTTER(POTATO PEAS CURRY)

2 cups boiled peas2 boiled and mashed potatoes1 finely copped onion1 ripe tomato2-3 strands of coriander leavesFor grinding
1 Onion1 bunch pudina2 Spoons Coriander seeds1 tsp Ginger paste2-3 cloves6-8 Green Chillies1/2 cup shredded coconut1/2 cup boiled peasSaltHow to make:
Grind the above masala with little water and keep it ready.Take a sauce pan and add 2 teaspoon oil.For seasoning, add mustard seeds, 1/2 tea spoon turmeric, small piece cinnamonAdd finely chopped onions and fry it till golden brown.Add above ground masala and stir.Add mashed potatoes and peas.Add finely cut tomatoes.And add salt to taste.Stir the mixture well.  Garnish with coriander leaves and serve hot with chapatis/parathas.Preparation time: 30-40 minutes

Prepare sugar syrup by adding 2 cups of sugar to 1.5 cups of water.Boil well to get a thick consistency(until all the sugar dissolves)(make sure you keep it in a low flame) and keep the hot sugar syrup aside.Take a piece of bread and cut the edges of the bread in to square or round shape.Take a pan covering with about 1.5 inch of oil and heat . Keep the flame on medium. In the hot oil+ghee mixture fry the bread pieces (few at a time). Fry the bread pieces till its golden brown on both sides. You would need to turn over one time in between to fry the other side.
