ALOO JEERA

INGREDIENTS Potatoes  4(large) Cumin seeds 1 tsp. Coriander powder 1 Tbsp Roasted cumin seed powder : 1 tsp Turmeric powder  1 tsp Red chilli powder 1 tsp Amchur powder(mango powder) 1/2 tsp Salt to taste Oil 1.5 Tbsp  HOW TO MAKE   Peel and  cut the potatoes into 1 inch cubes. Boil the potatoes till tender .Do not over boil them. Keep aside. Heat oil in a saucepan. Temper with cumin seeds, when it start to splutter, add  coriander powder, roasted cumin powder, turmeric and red chilli powder. Add little water. Stir and cook the masala for 3 to 4  minutes.  Now add the boiled potatoes and mix well so that all the masala gets coated on the potatoes. Add salt to taste and mix well. Finally add the dry mango powder. Stir for another 1 minute. Garnish with fresh coriander leaves . Serve hot with chapathis or rotis! Preparation time:30 Minutes.

MICROWAVE CARROT HALWA

 I have always loved my Mom's rich carrot halwa recipe which entails cooking and stirring the halwa in a large saucepan over the flame .And the end result..yummy carrot halwa!! But this time around  I thought of making my job easier by trying out carrot halwa in the microwave.And yes!It sure made my job easier and the end result was very delicious !!:0) INGREDIENTS 6 Medium sized carrots(peeled and grated) 2 Tbsp Ghee 1.5 cups low fat milk 1/4 cup milk maid(condensed milk) 4 Tbsp sugar(you can adjust this to your wish) 1/4 tsp cardamom powder Nuts,raisins for garnishing HOW TO MAKE Take a microwave safe bowl and add ghee to it. microwave ghee at 100% power for 30 seconds. Add the grated carrots to the bowl and mix well with the ghee.Now again microwave at 100% power for about five minutes.(Note:make sure you keep checking every 60 seconds and stir mix the carrots in between ) Now add milk ,condensed milk and sugar and mix well.Microwave at high power
