METHI SPROUTS POHA

Healthy methi or fenugreek seeds poha for breakfast! INGREDIENTS : Poha - 2  cup Methi sprouts (methi seeds sprouted at home) - 1 cup Onions - 2 chopped Chillies - 4 or 5 Ginger - 1 tsp minced Curry leaves - 2 tbsp Turmeric - 1/2 tsp Oil - 1 tbsp Mustard seeds - 1 tsp Jeera - 1 tsp Urad dal - 1 tsp Bengal gram - 1 tsp Asafoetida - a pinch Salt to taste HOW TO MAKE: Soak and drain the water from the poha. Heat a kadai and add oil to it. Once oil is heated, add in the mustard seeds, jeera, urad dal, Bengal gram, hing and ginger. Fry for a minute.  Add in chillies and onion and fry for a minute. Add 1/2  tsp turmeric powder and m8x well. Now add in the methi sprouts and fry well until they soften for about  5 mins. Add in the salt and mix well. Add in the drained poha and mix well. Switch off the heat and add in 1 tsp of lime juice and give it a nice stir . Serve while hot! Preparation Time: 20 minutes

POORI SAAGU

When we were Kids,I clearly remember my Grandpa coming to our house every Sunday morning to watch popular TV soap "Mahabharat"and my mom used to prepare his favourite thindi "Poori Saagu".He used to be super excited and would always say "Soft Pooris with Fine Saagu" :).And its really a heavenly combination ! MASALA DOSA

Dosa is  a typical dish in South Indian cuisine, eaten for breakfast or dinner, and is rich in carbohydrates and protein.Here's my mom's awesome masala dosa recipe !! Dosa Batter  Ingredients: 2 cups Rice 3/4 cup Urad Dal 1 fistful Bengal gram 1 fistful seeme akki(sago) 2 tsp Methi /fenugreek Seeds 1 tsp (Ghee+Oil) mixed for each dosa Salt as per taste HOW TO MAKE: Soak Urad dal, rice, methi seeds and sago with enough water  overnight. Grind the soaked ingredients with enough water to a  smooth paste in a grinder;Make sure the batter is not too watery! Allow the batter to ferment in a warm place for about 8-10 hours; Make sure the container has enough room for the batter to rise else the batter will overflow due to fermentation! AVAREKALU AKKI ROTTI

Akki rotti  is a yummy breakfast special from karnataka.Akki means Rice in Kannada.Avarekai=Hyacinth bean in English. Ingredients: 3 cups Rice flour 1 cup boiled avarekai(surti lilva) 1.5 tsp  cumin powder(Jeera ) 4-5 chopped green chilles A pinch of Asafoetida oil to roast onion/avarekai(surti lilva)/shredded veggies like carrot,radish(optional)(above picture shows Akki Rotti with Avarekai(surti lilva)) A cup of cut coriander leaves 1/2 cup of shredded coconut 1 tsp turmeric powder 1 tsp red chili powder Salt to taste How to make: First mix all the ingredients in a big bowl. Mix well without adding water. Add little water and knead the dough well. Take an orange sized ball of the dough or little smaller size.Take a big saucepan and first add little oil before and then pat the dough well on to the saucepan.You can make it thin or thick spread depending on your wish. HULI AVALAKKI

Huli Avalakki(GOJJU AVALAKKI): Ingredients: 200 gms Avalakki(poha) 1 Tsp jeera 1 Tsp black pepper Tamarind Roasted sesame -3tsp Jaggery Rasam powder salt How to Make: Grind avalakki,jeera,black pepper and roasted sesame and keep it aside. Take a container and fill it with tamarind water. Add Rasam/mensina pudi to it. Add Jaggery and salt to taste and mix everything well. Add the grounded avalakki mixture to the container and let it stay for 15 minutes. Garnish the poha with chillies,mustard seeds,coriander leaves. Mix well and serve! Preparation time: 20 mins
