Homemade Paneer (cottage cheese)

Homemade Paneer or cottage cheese..it is healthy and yummy!prepare at home n enjoyy !! INGREDIENTS : 1.5 liter milk 1 cup curd HOW TO MAKE Bring the milk to a rolling boil (make sure you are right there to avoid spill overs!). Add 1 cup of curd and give it a good mix. Now simmer for another 2 minutes and let the whey separate well. Switch off the flame and let it cool a bit. Now take a cheese cloth or a thin cotton cloth and transfer the whey on to it.Be sure to cool off to a normal temperature before squeezing the excess water. Now keep the cheese cloth on a strainer and keep some heavy weight on it so that all excess water will be removed .  Leave for about 2 hours .  Now take the paneer and refrigerate for about 1 hour . Once the paneer is a bit hard, cut them into cubes and they are ready to be used in curries or can be stored about 15 to 20 days in refrigerator.  Note: Lemon juice or curd can be used instead of curd.But I seem to like the...

PALAK PANEER(SPINACH COTTAGE CHEESE CURRY)

Palak Paneer is a yummy North Indian dish prepared with spinach and Paneer(Indian cottage cheese). This  is a rich, smooth, creamy curry where paneer cubes are cooked in a onion-tomato-spinach based gravy which is moderately spiced with Indian spices. INGREDIENTS:    3- 4 big bunches of spinach  (discard the coarse stems) -pressure cook 5 minutes and make a paste and keep it ready 250 gms paneer (cubed and lightly fried till brown in a tsp of ghee) 2 tbsp ghee (clarified butter) 1 tsp cumin seeds 3 onions finely chopped 4 green chillies slit length wise 1 tsp ginger garlic paste 1 tsp red chilli Powder 1 tsp coriander Powder 2 big juicy tomatoes (blanched in hot water, peeled and pureed) 1 cup water (use the water in which spinach was cooked) salt to taste 1 tsp garam masala powder 1/2 tsp kasuri methi  1 tsp malai HOW TO MAKE: Add ghee in a Kadai/saucepan  and add cumin seeds and let them splutter.  Add the onions and green chillie...
