RAVA ROTTI-ZERO OIL!

Rava Rotti is a family favorite of ours as its very healthy with absolutely no oil and at the same time the chewy texture is a sure hit with the kids ! Ingredients : Chiroti Rava [Fine Semolina]- 250gms Cucumber  2 big or 4-5 zucchini Finely copped onion- 2 big Methi leaves finely chopped- 1 big bunch Curry leaves-2-3 strands Green chillies-5-6  [according to taste] Salt to taste How to make: Use a hand blender or a mixer to finely chop cucumber/zucchini, onions, methi leaves, curry leaves, chillies. It should be a coarse mixture and not a fine paste. To the above mixture add Semolina & salt and mix well. (NOTE:pls do not add extra water to this dough!) Set aside in a container and rest it for 45mins. You will notice the dough will be stringy and elastic. Take a non-stick pan and spread the dough evenly. Cover it with the lid and let the rotti cook in sim-med flame. Note this roti should not become crisp unlike other rotis. S

VEGETABLE MAKHANWALA

INGREDIENTS: Mixed vegetables (french beans, raw banana, cauliflower, peas)- 2 cups Tomatoes-3 Peppercorns -3-4 Cloves(lavang)-3-4 25 mm. (1") cinnamon (dalchini) Cardamoms(elaichi)-2 -3 whole dry red chillies, broken into pieces - 3-4 Tomato sauce -2tbsp Cornflour- 2tsp coconut milk -1/2 cup Cashewnut powder-2 Tbsp Butter -3 Tbsp Salt to taste HOW TO MAKE: Boil a vessel full of water and immerse the tomatoes in it for one minute. Remove, de-skin and de-seed tomatoes and chop finely. Keep aside. Heat the butter in a pan, add peppercorns, cloves, cinnamon, cardamoms and red chillies. Add the chopped tomatoes and cook till mashed. Add the tomato sauce and boiled vegetables and mix well. Dissolve the cornflour in the coconut milk and add to the gravy. ALOO MUTTER(POTATO PEAS CURRY)

Ingredients : 2 cups boiled peas 2 boiled and mashed potatoes 1 finely copped onion 1 ripe tomato 2-3 strands of coriander leaves For grinding 1 Onion 1 bunch pudina 2 Spoons Coriander seeds 1 tsp Ginger paste 2-3 cloves 6-8 Green Chillies 1/2 cup shredded coconut 1/2 cup boiled peas Salt How to make: Grind the above masala with little water and keep it ready. Take a sauce pan and add 2 teaspoon oil. For seasoning, add mustard seeds, 1/2 tea spoon turmeric, small piece cinnamon Add finely chopped onions and fry it till golden brown. Add above ground masala and stir. Add mashed potatoes and peas. Add finely cut tomatoes. And add salt to taste. Stir the mixture well.   Garnish with coriander leaves and serve hot with chapatis/parathas. Preparation time: 30-40 minutes
