ONION PANIYARAM (Gunta Ponganalu)

Left over Idly batter at home?!No worries!try onion Paniyarams for a change..and you will definitely get hooked!!

INGREDIENTS Idly batter - about  3 cups Onions - 2 -finely chopped Green Chilles - 2 to 3 finely choppedGinger (grated) - about  ½ inch Asafoetida(Hing) - a pinchBlack pepper - ½ tsp Red chili powder(optional)Curry leaves - few sprigsGrated coconut - 2 Tbspsalt if requiredHOW TO MAKE Take a mixing bowl and add  all the ingredients with the Idly batter.
Add little salt if necessary and mix well.Heat the paniyaram tava ready.(it should be heated up before)
Grease the tava with a few drops of oil.Once it is hot,take a table spoon of the batter and fill about ¾ of the paniyaram mould.

Drizzle little oil and let it cook for 2-3 minutes on a low or medium flame.(Close it with a lid for faster cooking)After few minutes turn each paniyaram with the help of a spoon.


Tried this carrot kheer along with the goodness of muesli for a change!We all loved it!Hope you like it too!!Here is the recipe:)


Carrots - About 4 carrots(big) chopped into pieces Milk - 1.5 cupsCondensed milk - 4 TbspGhee - 1 TspAlmonds(soaked in little water) - 5-6Muesli - 1/4 cupSugar - 3 tbspWater - 3/4 cupSaffron few strands


Take a pressure cooker.Add in the chopped carrots(Peel the carrots if necessary)Pressure Cook the carrots in milk for about 3 whistles ,switch off and allow it to cool completely.Then blend them to a paste along with soaked almonds. Heat ghee and shallow fry muesli for a few seconds and keep aside. To the the same vessel, add the carrot paste and saute for 10 minutes.(to get rid of the raw taste)Add about 3/4 cup water and sugar to the reduced carrot paste and stir till the sugar dissolves. Now add in the fried muesli . Garnish with few saffron strands.Serve chilled and Enjoy!
