Craving pizza but don’t want to deal with dough? This quick rice paper pizza is my go-to hack—light, fast, and surprisingly delicious.
Ingredients:
• Rice paper sheets
• Chopped vegetables (onion, capsicum, tomatoes, corn, etc.)
• Grated cheese
• Pizza sauce (or ketchup if you’re in a rush)
• Salt, pepper, and herbs (oregano/chilli flakes)
Method:
1. Start by chopping your vegetables into small pieces.
2. Microwave the veggies for about 2 minutes to soften them slightly.
3. Place a rice paper sheet on a flat surface (you can lightly dampen it if needed so it softens).
4. Spread a thin layer of pizza sauce over it.
5. Add the microwaved veggies evenly on top.
6. Sprinkle grated cheese and season with salt, pepper, and herbs.
7. Cook on a pan over low-medium heat (covered) or in an oven until the cheese melts—this usually takes about 5–6 minutes.
That’s it! A quick, crispy, and light pizza ready in minutes—perfect for busy days or guilt-free cravings.
