Bangalore masala puri and particularly "the gaadi masala puri"...mouthwatering??!Tried making this and it turned out to be very close :)Read on and try making at home!


Chaat puris - Crushed- About 5-6 per plate (Recipe in a different post)

  • Fresh soaked green peas or frozen peas - 3 Cups
  • Soaked green gram(Soak overnight) - 1/2 cup
  • Green Chillies -4 or 5
  • Cinnamon - 1 inch
  • Bay leaf - 2
  • Cloves - 4
  • Pepper corns - 5
  • Mint leaves - a handful
  • Coriander leaves - a handful
  • Tamarind paste - 1 Tsp 
  • Coriander powder -1/2 Tsp
  • Onion - 1
  • Mustard seeds - 1 Tsp
  • Cumin Seeds - 1 Tsp
  • Ginger garlic paste - 1/2 tsp
  • Asafoetida - a pinch
  • Corn flour - 2 Tsp
  • Oil - 1 Tbsp
  • Cooked Green peas - 1 cup
  • Finely Cut Onion - 1
  • Finely Cut Tomato - 1
  • Finely grated Carrot - 1
  • Finely cut Coriander leaves
  • Red Chilly powder 
  • Salt
  • Sev /bombay mixture - 1/4 Cup

  • Take a pressure cooker and cook the soaked peas and green gram with little water for about 2-3 whistles.
  • Now take a pan and add oil.Add the asafoetida,mustard seeds and cumin seeds,once they start to sputter add ginger garlic and fry for a minute,now add in the finely cut onions,fry well until they turn translucent.Switch off and let it cool.
  • Take a grinder and Grind cooked green peas and green gram mixture with fried onion mixture,Green Chillies,Cinnamon, Bay leaf ,Cloves,Pepper corns,Mint leaves,Coriander leaves ,Tamarind into a smooth paste.
  • Take a deep bottomed vessel and add the ground mixture to it.
  • Add sufficient quantity of water ,salt,corn flour (do not add directly,mix with little water and make a paste without knots) and bring it to boil.
  • Add in a small bay leaf and let it to boil ,once boiling simmer on low heat for about 1 hour ,stirring the gravy once in 5 minutes to make sure the gray does not burn.

Now for assembling the masala puri on a plate.Follow the below steps!
  • Take 5-6 chat puris and mash them as shown below.

  • Next add about 2 Tsp peas on the puris.

  • Take about 2 ladles of  prepared hot gravy and pour it in the plate.

  • Now Garnish with onions,tomato,carrots.
  • Add in a pinch of salt and red chilli powder (as required)
  • Add little sev atop and then with garnish with coriander leaves 

  • Now the Masala puri is ready to be served!Serve while hot and enjoy!
