ALOO JEERA

INGREDIENTS Potatoes  4(large) Cumin seeds 1 tsp. Coriander powder 1 Tbsp Roasted cumin seed powder : 1 tsp Turmeric powder  1 tsp Red chilli powder 1 tsp Amchur powder(mango powder) 1/2 tsp Salt to taste Oil 1.5 Tbsp  HOW TO MAKE   Peel and  cut the potatoes into 1 inch cubes. Boil the potatoes till tender .Do not over boil them. Keep aside. Heat oil in a saucepan. Temper with cumin seeds, when it start to splutter, add  coriander powder, roasted cumin powder, turmeric and red chilli powder. Add little water. Stir and cook the masala for 3 to 4  minutes.  Now add the boiled potatoes and mix well so that all the masala gets coated on the potatoes. Add salt to taste and mix well. Finally add the dry mango powder. Stir for another 1 minute. Garnish with fresh coriander leaves . Serve hot with chapathis or rotis! Preparation time:30 Minutes.

MICROWAVE CARROT HALWA

 I have always loved my Mom's rich carrot halwa recipe which entails cooking and stirring the halwa in a large saucepan over the flame .And the end result..yummy carrot halwa!! But this time around  I thought of making my job easier by trying out carrot halwa in the microwave.And yes!It sure made my job easier and the end result was very delicious !!:0) INGREDIENTS 6 Medium sized carrots(peeled and grated) 2 Tbsp Ghee 1.5 cups low fat milk 1/4 cup milk maid(condensed milk) 4 Tbsp sugar(you can adjust this to your wish) 1/4 tsp cardamom powder Nuts,raisins for garnishing HOW TO MAKE Take a microwave safe bowl and add ghee to it. microwave ghee at 100% power for 30 seconds. Add the grated carrots to the bowl and mix well with the ghee.Now again microwave at 100% power for about five minutes.(Note:make sure you keep checking every 60 seconds and stir mix the carrots in between ) Now add milk ,condensed milk and sugar and mix well.Mic...

REISWAFFELN BHELPURI

There are various kinds of waffles available in Germany.There are rice waffles,corn waffles etc.I bought a pack of rice waffles(Reise waffeln with salt) and thought of making bhelpuri to spice it up! INGREDIENTS: 3 Reisewaffeln (rice waffles) Onion -1 Carrot-1 Tomato-1 Chilli powder-1/2 tsp salt to taste Dates syrup- 1/2 tsp lemon juice-1/2 tsp coriander leaves HOW TO MAKE: Finely cut the onions and tomatoes and transfer them into a big bowl. Finely grate the carrots and transfer into the bowl. Add chilli powder,lemon juice,dates syrup and salt and mix well. Now crush the rice waffles and add them to the above mixture. Mix well . Garnish with coriander leaves and serve! Preparation Time; 15 minutes

EGGLESS SPONGE CAKE

This is a simple and easy to bake cake recipe.And it being eggless is icing on the cake;-) INGREDIENTS 2 1/2 cups all-purpose flour 2 teaspoons baking powder 1 (14 ounce) can sweetened condensed milk few strands of saffron 1 cup melted butter HOW TO MAKE Preheat the oven to 350 degrees F (175 degrees C). Grease and flour the baking pan. Sift together the flour, baking powder and saffron into a large bowl.   Make a well in the center and pour in the sweetened condensed milk and melted butter.  Mix well and pour into prepared pan. Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.  Allow it to cool and Enjoy! Preparation time: 20 minutes Cooking time: About 45 minutes Note: Vanilla extract,orange extract can also be added to make it more interesting.

TOFU BIRIYANI

Tofu is similar to cheese from the soyamilk..they are low in calories but rich in proteins..I wanted to try tofu instead of Paneer so I  prepared tofu vegetable biriyani!They turned out really yummy with amazing flavour.Enjoy the recipe below! UDDINA VADA

Uddina Vada is a traditional South Indian recipe which is a common MUST HAVE for any south indian  breakfast. The idly and Sambar make a heavenly combination with the crispy vadas! This recipe is from my cousin Roopashree:) INGREDIENTS: Urad dal - 1 cup Salt - to taste Pepper - 2 tsp Ginger - 1 tsp Curry leaves - a few Chillies - optional Oil - 2 Tbsp HOW TO MAKE: Soak the urad dal in 2 cups of water for about 3 hrs. Grind the black pepper and keep it aside. Chop the ginger into very small pieces and keep it aside. Drain the water from the soaked urad dal.Grind the soaked urad dal with little water, so that the consistency is thick. Add pepper, ginger and salt to this mixture( If you want it be more spicy, chopped chillies can be added.) Heat oil, pat the batter on a oiled plastic sheet and make a hole like donut. Khandvi - A Gujrathi snack made from Besan - Low Cal Recipe

Khandvi is a Gujrathi delicacy. Its a healthy snack as it involves very less usage of oil and yet is very filling as its made of Chickpea flour or besan. Its a snack which needs a bit of practice to get the consistency right and also quick hands to spread n' roll the ready mixture when its done. Since its not very spicy kids love them as well! Goes well as a tea snack.
