A great healthy alternative to coconut chutney,the watermelon rind chutney is very delicious and nutritious !Try it for a great variety!Do not discard the watermelon shell the next time you get it home!;-) Watermelon Rind Chutney – made from the lovely white part(one of the most underutilized parts of the watermelon) residing quietly between the fruit and its hard green exterior. Watermelon rind is very healthy & nutritious. It is rich in Vitamins A, B6 and C. It is also high in both beta-carotene & lycopene. WATERMELON MILKSHAKE

A perfect way to beat the summer heat!! INGREDIENTS: Diced  Watermelon 3 Cups Milk (I used 1.5% fat) 1 Cup Sugar 3-4 tsp HOW TO MAKE: Add diced watermelon ,milk and sugar in to a blender and blend well till it becomes smooth. Add ice cream or ice cubes on the top for variety!(optional) Serve Chilled!  Preparation Time: 10 minutes

INSTANT OATS DOSA

Bored of eating oats cooked with milk and sugar ,yogurt etc..??.try this recipe for some variety!This Dosa is not only easy to make but it is delicious and healthy:) INGREDIENTS: Oats 2 cups Rava/sooji/ssemolina 1 cup(use the thin rava) Rice Flour 1/2 cup wheat flour 1/2 cup Onion 1 Big- nicely chopped  carrot 1/2 cup grated Cumin seeds - 2 Tsp Chillies 4-5 Ginger 1 inch Coriander leaves few strands finely chopped Curd 1 cup Water Salt to taste HOW TO MAKE: Take a pan and Fry the oats, rava ,cumin seeds,chillies for few minutes.(make sure you do not burn them). Let it cool for sometime. Take a grinder jar and then add the above mixture and add ginger , rice flour and wheat flour. Now Grind them in to smooth powder and keep it ready. Hot Thai curry with aromatic Jasmine rice! INGREDIENTS: Red curry paste 2-3 Tbsp Coconut milk 1 can(400 ml) Sugar 2 Tbsp Soy Sauce 1 Tbsp Red Bell Pepper 1/2 sliced Green Bell Pepper 1/2 sliced Yellow Bell Pepper 1/2 sliced Mushrooms 1/4 cup Baby corn 1 cup Carrots 1/2 thin slices Onion 1/4 sliced/Spring onions can be used  Peas - 1/4 cup Basil leaves 4-6  Tofu 1 cup cubed(optional) Oil 1 Tbsp HOW TO MAKE: Heat the Oil in a wok . INGREDIENTS: Fresh pudina/mint leaves 1-2 Tbsp Ginger - shredded 1 Tbsp Tea powder - 3 tsp water -2 cups Milk -2 cups(or according to your own taste..add less if you want a stronger tea) Sugar to taste(Honey can also be substituted) HOW TO MAKE: Take a pot and add 2 cups of water and fresh mint leaves to it and bring them to a slow boil.Boil the water for about 4-5 minutes or until the aroma of mint starts infusing in the boling water. AVOCADO CHUTNEY

INGREDIENTS: Avocado – 1 ripe --peeled,pitted and mashed coriander leaves – 1 bunch Mint leaves - few strands Green Chillies-5-6 lemon juice – 1tsp Tamarind juice -1 tsp(concentrated) Salt to taste HOW TO MAKE: Peel the ripe avocado(It is easy to remove the skin when ripe),Once it is peeled just twist at the centre of the avocado and it will be split in to two halves and you will see a big seed,remove the seed and mash the avocado. Squeeze lime juice all over it and mix well and keep it aside. In a mixer grind coriander leaves, chillies,mint leaves,tamarind along with little salt and little water to smooth paste. When we were Kids,I clearly remember my Grandpa coming to our house every Sunday morning to watch popular TV soap "Mahabharat"and my mom used to prepare his favourite thindi "Poori Saagu".He used to be super excited and would always say "Soft Pooris with Fine Saagu" :).And its really a heavenly combination !
